Dinner, 24/4/19: Spiced Sweet Potato Shepherd's Pie, Kale


This recipe was from a vegan cookbook, though I just used regular milk in the sweet potato mash, as we are ok with cow's milk in this house. It was a nice lentil pie - I liked the sweet potato topping - contrasted well with the Indian spices in the lentils. The kale was in my veggie box this week and was really young and tender - possibly the best kale I've ever eaten.
