This is a dish that we used to have all the time, then stopped having so much when we had small children who didn't like food that was too spicy. But it's a lovely dish, so I decided I should start cooking it again. This time I used a Thai curry paste from Waitrose, rather than the Thai brand I used to use, and it was much milder than what we were used to. Guess I have to hunt out the Thai brand - the problem there being it comes in a huge container, which takes months to use, rather than a 2-curry size jar. Sigh.
