Pasta la vista, baby


Although we have owned a pasta machine for a long time, we don't use it much. It's so easy to just buy pasta, let's face it.  But something like ravioli or other filled pasta, we thought would be nice to have a go at making ourselves. It's definitely a weekend project, though, as while it's not particularly difficult, it is time consuming.

Alex is a master at rollling the pasta out, using the machine (though the other kids helped, too).


We cut it into circles (and some squares, and Olivia made a single heart shape because she likes doing things like that).


For the filling, I used my own take on a couple of recipes - this is a roasted butternut squash filling, with ricotta, parmesan, walnuts, sage and thyme. It was gorgeous.

and finally, on the plate.  I made a very simple "sauce" of butter & olive oil, warmed through with some garlic and thyme. It worked well.

The pasta, we thought, was a little tough - a little more cooking might help, but also, we will look again at recipes and see whether we can come up with something which comes out a bit softer in the kneading - this was quite stiff even before rolling, which is where I think the problem was (rather than in the rolling stage).  It was delicious, though!
