I do have a recipe for a dish like this, but I don't really use it - I've changed and added and cook it differently (it's a microwave recipe) - I mainly keep it in my recipe book to remind me that it's a good option for chicken thighs. I happened to have a jar of preserved lemons in the fridge - an almost empty jar! - so it seemed a good time for a chicken dish with lemons, olives and almonds. Served with a mix of brown bastmati, wild and red rice and what was left of the spring greens from the other night. Yum.
