This was a nice easy way to cook salmon (not that it's ever that hard) - you do the potatoes in the oven, and at the last 10 minutes, put the salmon on top and stick it back in the oven. It was lovely. It had some spices on and a salsa to go on top (after it's cooked) - hence the "Mexican" in the title. The asparagus was just because it's in season, so I like to eat as much as possible before it goes out of season...
