This lentil shepherd's pie had a topping of regular potato and sweet potato, but the sweet potatoes were purple ones - sometimes the veg in our veggie box is somewhat random! Also, I put a couple of chopped up beetroot in with the veggies in the pie, so the meal was extremely purple. Tasted nice, though.
