May 13th: Meat & Vegetable Wrap (Mu Shu Pork)


Recipe source: Martin Yan's Chinese Cooking (though I did make quite a few changes)

notes: I left out the Chinese mushrooms, as the kids don't really like them. I added beansprouts and used some soaked rice noodles, as that's what I had in the cupboard. Also added cucumber and spring onions for crunch. We also ate more pancakes than in the recipe - we always do!
