I had about half a block of tofu - maybe more - leftover from Geoff's dinner last night (on Thursday, we all sort our own meals, due to various committments and conflicts), so I did some fried spiced tofu and some fried spiced chicken chunks for these fajitas - the tofu was great. Which is good to know for future vegetarian fajita meals. I've tagged this vegetarian and vegan, as you could easily adjust by leaving out the chicken and/or cheese & sour cream.
