A dish from a book about Potatoes (Potatoes from gnocchi to mash by Annie Nichols), which I've had for many years and have cooked quite a few things from; this is the most repeated one, though honestly, I don't really need much of a recipe for it any more. I was going to chuck some green beans or bamboo shoots in it, but I didn't have either, so I didn't. Sometimes I use red curry paste instead of green; both are good.
