This was very nice. We all liked it, although we had some ideas for how to make it even better next time - for one thing, the ratio of veg to meat could be increased, and we thought some of the veg could be added towards the end of the cooking time to give a little more variety of texture. Also, it could easily have had a third salted lemon, or even two more. And I thought it wanted just a little more cooking liquid, as the sauce was very thick. But the taste was lovely and the flavours rich and deep. The pomegranates were a nice touch and besides looking pretty, tasted fresh and light with the tagine. Certainly a winner.
