Another easy mid-week supper - the veg soup is just leeks, carrots, celery, chickpeas, tinned tomatoes (blended smooth) and some stock - some herbs and seasoning, but very simple. The cheesy toasts are even easier - just garlic bread slices with a bit of grated cheese on the top. Indulgent, I know, but I do by the lower-fat garlic bread to start with...
