This was a lovely, spicy dish - a little too spicy for Sarah, who likes moderately spicy stuff, but nothing stronger than that. It had a Scotch Bonnet chili in it - just one, but that was enough. She agreed that the flavour was great, though - it was just a little too much heat for her.
The rice is cooked with the chicken (after a while) and then the beans added in the end - it's a nice, one-pot meal, although it does require marinating beforehand, so you need to be a little organised. The recipe is from a book called Good Housekeeping's Favourite One-Pot and Slow-Cooked meals.
