Dinner, 7/6/13: Moroccan Lemon Chicken


I still have a jar of preserved lemons in the fridge - our local shop sells them, but they are big jars, so it always takes a number of meals to get through them.  This is a dish based on a recipe from years ago, but I kind of do my own thing with it. Chicken thighs, browned, with Middle Eastern spices, almonds, olives, preserved lemons. I put the courgettes in about 10 minutes from the end so they don't get too mushy. Served with couscous.
