Dinner, 31/8/20: Mexican Style Salmon Traybake


This is a nice, easy way to use salmon which is a little different to the usual - the potatoes are cooked in the oven with olive oil and paprika, then the fish added on top just for the last 10 minutes or so.  The topping is a salsa of onion, tomato, avocado, coriander and lime juice. It seems a little unusual but it's very tasty.
