This is a dish I used to make a lot, but haven't made much recently. Tonight's version was tasty, though not very spicy - I think the curry paste I have is unusually mild. Guess I'll have to go back to one of the oriental shops and buy some proper Thai curry paste... I do (loosely) use a recipe, but it's annoyingly long to scan as it's one of those with step-by-step photos, so I'm not going to share it. Sorry!
