Lunch, 8/2/15: Sticky Ginger Chicken with Carrots and Cashews; Hot and Sour Aubergine; Rice


We had some friends around for lunch today, which meant lunchtime cooking (but no dinner cooking) - I made this chicken dish, which we've had before (Sarah cooked it once, perhaps twice)


and this aubergine side dish, which was new to us. And rice, which was basically just rice!

The chicken is lovely and sticky and gingery, with onions and baby carrots and cashews and the aubergine was dark and almost treacly, with soy sauce and vinegar.  Mmm.
