Dinner, 27/5/19: Burnt Aubergine Veggie Chili
Yum. Rich & smoky flavour (due to the burnt aubergine - you char the skin, then remove it, but the smoky flavour stays). Tasty! Served with tortilla chips to crumble on, and optional cheese for those who wished it.
