Olivia cooked again (though this is more of an assembly meal) - this is our quick go-to meal - perfect for nights when we are rushed, or not sure what time dinner is going to happen, or need something flexible, etc. Tonight it was because Geoff was on his way home from Switzerland, and we weren't sure what time he'd be back and how much time he'd want to work before eating - as this meal only takes about half an hour from start to finish but can stay in the oven a little longer if necessary, it was perfect.
