Try this for salmon: olive oil on both sides of salmon. Place in/on shallow pan. Add any herbs (I like just s/p). Then cover completely (yes, "encase") with thin slices of lemon. (If the salmon fills the shallow casserole, a simple top layer does it.) Bake to meet your personal taste at 400 (I like mine a bit well done and go for 15-20 minutes.) Lovely. (My niece had adopted this method but uses a layer of onion etc first. I feel that corrupts the purity of the salmon). Enjoy!!!
