Monday in our house tends to be a night for soup. Alex has Cubs at 6.30, the girls have Guides at 7 and Geoff frequently has a conference call meeting at 5, which could easily last an hour, so soup is useful because people can eat at a time that suits them, rather than the meal being spoiled if we don't all sit down together. This wilted spinach and stilton soup was from The New Covent Garden Food Company's A Soup for Every Day. This book was one I picked up through The Book People for about a fiver, and it certainly has proved its worth.
