The Covent Garden Soup Cookbook recipe is actually for Broccoli and Stilton soup, but as the kids aren't mad keen on blue cheeses, I decided to change it up. Wish it wasn't soup weather in June, but there it is!
For a different and delicious summer soup try Martha Stewart's corn soup recipe. She strips the corn from the cobs and then boils the cobs in water to produce the stock................it adds an extra layer of sweet corn flavor and freezes very nicely.
