Lunch, 9/6/13: Selection of Veggie dishes


Geoff's brother and his wife, who live in Australia, are taking a trip to the UK and Italy this year, in honour of his brother's 60th birthday, so today, we had them around to lunch, while they are in London. I made a selection of vegetarian dishes so we could all help ourselves - and there would be leftovers for the next day as well...


Stuffed halloumi peppers (with mint, halloumi cheese, pine nuts, lemon zest);


pea and potato pastries - a bit like a samosa filling inside, with peas, potatoes, curry spices, onions, etc;


Butternut squash and lentil salad - we've had this lots of times before; 


Stuffed courgettes (stuffed with feta cheese, olives, sun dried tomatoes, capers, lemon zest)


and a spicy cucumber salad. There was also fresh bread. A feast!
