Dinner, 31/7/16: Spinach and Ricotta Enchiladas (Thomasina Miers)


These were nice, though the recipe included raisins in the filling, which we all agreed (not just Sarah, who doesn't like raisins) that they didn't really add anything. If I want to boost the texture of the filling next time, I'll add more pine nuts and maybe some chopped spring onion or something.
