Dinner 2/1/15: Vegan Lancashire Hotpot


This is a meal we've had many times before - it's a favourite from the Simon Rimmer cookbook "The Seasoned Vegetarian". I've cooked a number of things from that cookbook, and I think we've enjoyed all of them, but this is certainly our favourite. It just tastes really rich and glorious. I often add mushrooms as well.
