Dinner, 24/3/14: Warm Roast Vegetable and Lentil Salad


This is a really easy dish - the most difficult thing is peeling and chopping veg (not very hard!) - it uses tinned lentils, which are just stirred in and heated through with the spinach at the end. I really also like the addition of a little pesto for flavour...
