Dinner, 2/1/19: Vegan Lancashire Hotpot


This is a family favourite - everyone loves it. It's a Simon Rimmer recipe from The Seasoned Vegetarian, and it just has such an intense flavour. Plus the barley is a great addition.  This time, I also added some swede to the veg in the recipe (carrots, parsnips, celery) because I had a swede from my last veggie box, and that worked really well, too.
