Dinner, 4/1/19: Roast Vegetables with Couscous


Picked up a bunch of interesting vegetables for roasting today at the Farmers' Market: a squash (Crown Prince), a Romanesco, some beetroot, some baby carrots (orange, purple & white).  I roasted them with a little oil and za'atar, and at the end, threw in some chickpeas and cavolo nero (black kale). 


Served with couscous, (homemade) hummous, and pickled red cabbage on the side. Yum.
