Dinner, 11/1/13: Squash and Mushroom Macaroni Cheese


I'm not sure I'd really call this macaroni cheese, but it was delicious. It was roasted butternut squash and chestnut mushrooms, tipped into a dish of cooked wholemeal pasta, with a container of low fat creme fraiche and a little (very little, really) grated cheese - mostly parmesan, but a little cheddar too as I didn't have much parmesan. Some breadcrumbs on top. It was easy, but surprisingly tasty. Even the kids admitted that the mushrooms weren't too bad in this dish - and one thing in particular I noticed was that the wholemeal pasta was really lovely - sometimes it can be a bit stodgy, but in this instance it was just as nice in texture as white pasta.
