Dinner, 4/1/13: Fajitas


We had two extra teenagers for dinner tonight, one of whom was a vegetarian with a lot of food allergies, and the other of whom I haven't cooked for often before (some of the kids' friends, I have a good idea what they like and don't like, others, not so much) - so it seemed like a good idea to have an assemble-it-yourself meal. Which means either pizza or fajitas.  Didn't really fancy pizza, so it was fajitas with various options for fillings - spicy chicken for the non-vegetarians, black beans with tomatoes and chipotle paste, spicy sweetcorn, onions & peppers, tomatoes, lettuce, guacamole, cheese, and so on. There is lots leftover, though, so we'll be seeing it all again - probably as mixed filling enchiladas.
