Dinner, 6/1/13: Enchiladas


Enchiladas don't really look very attractive, but they taste nice. I made these with the leftover ingredients from the other evening's fajitas, so some had chicken and spicy sweetcorn in them and others had black beans & tomatoes & peppers. All were yummy, though, and there's only a small amount left for lunch this week. Which is as it should be!
