Enjoyed this. The texture was nice, as the soup was blended and then the cabbage added - and of course the crispy bacon was crispy. And bacony. If you wanted to make it vegetarian or vegan, you could easily put some chopped toasted nuts or something like that for the topping - we like bacon, but it's the saltiness and the crunch that are really important and there are other ways to achieve that.
